Senior Care in Costa Mesa CA

Anything that can help you shave time off of your tasks and still get the best results in your senior care plan is a wonderful thing and one of those things is a slow cooker. While many people think

Senior Care in Costa Mesa CAof the slow cooker as an appliance that should only be used during the fall and winter months to prepare heavy meals such as soups, stews, chili, and meats, this kitchen staple can be one of your most beneficial tools during the summer months as well. Using a slow cooker not only saves you time by cooking everything at once, but it also eliminates the need to turn on the oven, keeping all of that heat from pumping through the home.

This recipe is for a frittata that takes less than 2 hours to cook and gives you, your aging loved ones, and their senior health care services provider an energy-building boost of protein and healthy fat, as well as vitamin-filled vegetables for a breakfast that will keep you going throughout the day.

What You Will Need

• 1/2 cup of diced onion

• 1 tablespoon extra virgin olive oil

• 1 cup of 2% shredded mozzarella cheese, divided

• 3 whole eggs

• 3 egg whites

• 1/4 teaspoon of black pepper

• 1/4 teaspoon of white pepper

• 2 tablespoons of 1% milk

• 1 packed cup of chopped baby spinach with no stems

• 1 diced Roma tomato

• Salt to taste

• A small skillet

• Slow cooker

• Nonstick cooking spray

• Large mixing bowl

• Small bowl

• Whisk

What to Do

• Put the small skillet over medium heat

• Add olive oil and allow the skillet to heat until the olive oil shimmers slightly

• Add onion and saute until tender, stirring regularly to ensure the onions do not burn and that they cook evenly

• Lightly spray the inside of the slow cooker with the nonstick cooking spray

• Crack the whole eggs into the small bowl, then add the egg whites

• If you are separating whole eggs to obtain the egg whites, reserve the yolks for another recipe in the refrigerator. They are safe for up to 3 days

• Use the whisk to beat the whole eggs and egg whites together until they are a consistent color and lightly frothy texture

• In the large mixing bowl, combine the sautéed onion, 3/4 of the cup of mozzarella cheese, the eggs, egg whites, milk, both peppers, spinach, Roma tomato and salt

• Whisk to combine the ingredients

• Pour contents into the slow cooker

• Sprinkle remaining 1/4 cup of cheese on top of the egg mixture

• Cover the slow cooker

• Cook on low for 1 and a half hours or until the eggs are set and a knife can be inserted in the center and comes out clean

• Very carefully remove the frittata from the slow cooker by slipping a heat-resistant spatula under the edge and lifting the frittata up the side so that you can slip it out onto a serving platter

• Cut the frittata in wedges and serve either on its own or with a light breakfast side such as a fruit salad to create a delicious and nutritionally complete breakfast
