What You Will Need

• 1/2 cup of diced onion

• 1 tablespoon extra virgin olive oil

• 1 cup of 2% shredded mozzarella cheese, divided

• 3 whole eggs

• 3 egg whites

• 1/4 teaspoon of black pepper

• 1/4 teaspoon of white pepper

• 2 tablespoons of 1% milk

• 1 packed cup of chopped baby spinach with no stems

• 1 diced Roma tomato

• Salt to taste

• A small skillet

• Slow cooker

• Nonstick cooking spray

• Large mixing bowl

• Small bowl

• Whisk

 

What to Do

• Put the small skillet over medium heat

• Add olive oil and allow the skillet to heat until the olive oil shimmers slightly

• Add onion and saute until tender, stirring regularly to ensure the onions do not burn and that they cook evenly

• Lightly spray the inside of the slow cooker with the nonstick cooking spray

• Crack the whole eggs into the small bowl, then add the egg whites

• If you are separating whole eggs to obtain the egg whites, reserve the yolks for another recipe in the refrigerator. They are safe for up to 3 days

• Use the whisk to beat the whole eggs and egg whites together until they are a consistent color and lightly frothy texture

• In the large mixing bowl, combine the sautéed onion, 3/4 of the cup of mozzarella cheese, the eggs, egg whites, milk, both peppers, spinach, Roma tomato and salt

• Whisk to combine the ingredients

• Pour contents into the slow cooker

• Sprinkle remaining 1/4 cup of cheese on top of the egg mixture

• Cover the slow cooker

• Cook on low for 1 and a half hours or until the eggs are set and a knife can be inserted in the center and comes out clean

• Very carefully remove the frittata from the slow cooker by slipping a heat-resistant spatula under the edge and lifting the frittata up the side so that you can slip it out onto a serving platter

• Cut the frittata in wedges and serve either on its own or with a light breakfast side such as a fruit salad to create a delicious and nutritionally complete breakfast
